Recipe of the Week – BBQ Chicken with Mozzarella

BBQ Chicken with Mozzarella 

 

 

 

 

BBQ Chicken with mozzarella

 Serves 4

4 boneless, skinless chicken breasts

2-3 tbsp bbq seasoning (if you don’t have it, use 50/50 paprika and garlic powder)

Sea salt and black pepper

½ cup of low fat grated mozzarella cheese

Olive oil for sautéing

Preparation:

Preheat the oven to 400 F. add the sea salt and pepper on both sides of the chicken first, then add the bbq seasoning. Gently press the seasoning into the chicken. Heat the olive oil in a skillet and brown the breasts a few minutes on each side. Transfer to an oven safe baking dish. Add the mozzarella cheese evenly over the chicken and finish the cooking in the middle of the oven for 10 min. If you want the cheese to be golden brown; turn the broiler on low for a few minutes in the end.

Accountability Matters

~Goal Setting, Accountability, Results~

What is your current challenge in the area of health, weight loss, nutrition or exercise? What is it that you truly want and seek? What comes in between your aspirations and your goals?

I have the privilege this week to reconnect with many of my previous clients. I’m fascinated to learn more about their experience of working with me and to discover what stands in their way of taking it to the next level. The knowledge of the science of blood sugar stabilization and live it ongoing yields an overwhelming response of; wow – when I follow it; I lose weight and I feel fantastic! The missing thread for ongoing success and permanent body fat loss is accountability.

Once accountability is removed, many pieces of the puzzle of weight loss, life style changes, and newly implemented habits will fall to the way side. What we forgot is to honor who we are and keep the memories of how great we felt fresh in the forefront.

What comes in between our desire of losing weight and the slice of cheesecake? What conversation are you having with yourself that will throw out all your undertaking that took so much hard work to accomplish? Who is in charge of your life?

Maybe your gift for yourself this holiday season is to engage a coach, a friend or co-worker to hold you to your goals and commitments.

  • Know yourself so well to reach out prior to the return of all of the old habits.
  • Know yourself to engage a form of accountability for your health and your life
  • Know that people love to be of service and make a difference if they are allowed to.

Can you really afford the frustration and hopelessness? How much is a confident fit and sexy body worth to you?

It’s priceless to be free in your body. To have zero concern of the mirror that glances at you from all angels. What is it going to take for YOU to stay committed until you have no emotional attachment to food? When there is no emotion, there is freedom. When you are no longer attached, you achieve your goals and your commitment is unwavering.

It is possible. It starts with you believing it is and if you can’t believe in yourself, know that I believe in you.

Recipe of the Week

Fresh Cabbage Salad

Serves 4-6

 

½ head green cabbage, cored and quartered

1 cucumber, peeled and cut into sticks

1 green pepper, sliced

2 shallots, sliced

6 radishes, sliced

1-2 avocados cut into cubes

½ cup olive oil

¼ cup white vinegar

1 tsp limejuice

Sea salt and black pepper to taste

Preparation:

Cut all the vegetables and mix the dressing by whisking all ingredients except the oil and adding the oil in a thin stream while whisking. Refrigerate for an hour before serving.

Scary or Sugar High Halloween – choose!

The holiday season officially begins with Halloween, to be followed by Thanksgiving, Hanukkah and Christmas.  This time of year can be both exciting and for some overwhelming. Not only are there more treats around – which is tempting for most people – there are also holiday parties and plenty of social events with friends, colleges and family members for the next two months.

As the holiday season begins this weekend, here are some ways for you to enjoy them and a leaner you by January 1st 2010 – and even better why don’t you set your New Year’s Resolution now so when January hits, you are ready to embark 2010 with a different goal than last year?

Perhaps you have outgrown trick treating but maybe your kids haven’t. How can you stay balanced and amongst all the treats?

  • Always eat a meal prior to going out. Walking around trick treating with a full belly will definitely ensure less amounts of sugar entering you body.  I recommend a meal that has primarily protein (6-8oz), non-starchy carbohydrates such as spinach, broccoli, or asparagus and healthy fats such as olive oil, avocado or nuts.
  • Pick out your favorite threats – 3 of them – wisely and savor them slowly! Always ask yourself; is this really worth it?
  • Don’t save any treats for later – if they magically make it home, put them into the freezer.
  • If you are having a party, ensure healthy snacks (cheese sticks, veggies with peanut butter and devil eggs) and toys being available – you’ll be remembered to offer something fun & different.
  • Imagine where you want to be by January 1st, 2010. Who will you be? How will you look like? What steps do you have to take now until then to accomplish those goals?
  • Start implementing the action steps over the next two months. Make sure you put into practice a work out routine that includes speed training and weight bearing exercises.

The holiday season can be one of your greatest experiences of family, closeness, intimacy, friendships, partnerships and fun. Allow yourself to enjoy the upcoming events. Allow your health to be your foundation for life; anchoring you in what really matters and knowing by taking action now, you will enjoy the holiday season. You will also have more energy to keep up with all responsibilities that also comes with it and feel confident in your body. Savor the smells, enjoy with your eyes and mind before your stomach, eat slowly – remember it takes 20 minutes before you feel full – and always think about your ultimate goals so you have clarity of where you want to be. Ask yourself, what will my goals produce for me in my life? Then fall in love with your answer!

What is your New Year’s Resolution?

Why are you waiting for January to start addressing your goals?

There are many components to what makes one person succeed vs.  fail in their attempt to reach their weight loss goals.  When you set a new goal, do you also ask yourself:

  • What is my biggest challenge right now? 
  • What is stopping me from already accomplishing my goal?
  • What is behind my struggle?

Many people have emotional attachments to food, or they eat out of boredom or stress, others simply love food and have a difficult time eating small meals and indulge too often for weight loss to ever occur. Regardless of what your reasons are, we first need to confront what is preventing you from succeed.

Once you are aware of what that is, you can establish a game plan that will take those challenges into consideration. To set yourself up to win, also look at what really matters to you in your life.

  • What other commitments to you have?
  • How much time does they occupy?
  • Are your weight goals aligned with your commitment?

When you spend time on your foundation and then, first then, apply a sound health structure, you will succeed.

Black beans a’ la Puerto Rico

A few months ago I met a dedicated and knowledgeable private chef. What stood out, beside that he was a fellow Swede, was his commitment to wholesome organic food, common philosophy of nutrition & health, and the value of his services. He has graciously written recipes just for you and together we are working on putting together a cookbook and ‘getting started guide’ to be released this fall! Black beans a’ la Puerto Rico

Serves 4-6

2 cans of black beans

4 garlic cloves, chopped

½ yellow onion, chopped

2 slices of ham, chopped

1 vegetable stock cube

½ cup of filtered water

1 small can of tomato sauce

2 tsp oregano or adobo seasoning

1 bay leaf

Sea salt and pepper

Preparation:

Sauté the onions in some olive oil for a few minutes then add the ham and garlic, sauté for a few minutes then add the water. Mash half of one can of the beans with a fork or a hand blender and add it to the pot with the stock cube. Add the spices and tomato sauce after it has simmered for 5 min. Simmer for another 5 min. and serve.
